  • 4 cups vegetable broth Use a good-quality broth for best flavor.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 1 cup grated parmesan cheese Add towards the end to prevent curdling.
  • 3 cups mixed vegetables (carrots, peas, corn, etc.) Can use frozen or fresh; ensure bite-sized.
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste Adjust seasoning according to preference.
  • Fresh parsley for garnish Adds color and freshness.

Preparation

  • In a slow cooker, add the diced chicken, vegetable broth, heavy cream, mixed vegetables, minced garlic, diced onion, and dried thyme. Season with salt and pepper.
  • Gently stir the mixture to combine all ingredients well. Ensure everything is submerged in the broth for even cooking.

Cooking

  • Cover and cook on low for 6–8 hours. The chicken should be cooked through and tender by the end of the cooking time.
  • About 30 minutes before you’re ready to serve, stir in the grated parmesan cheese. This will melt into the stew and enrich the flavor.

Serving

  • Just before serving, sprinkle fresh parsley on top for a touch of color and freshness.

Notes

For best results, avoid overcooking the chicken and feel free to customize the recipe with your favorite vegetables or proteins. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
