Ingredients
  

For the Chicken Base

  • 4 pieces chicken breasts (boneless and skinless) Can be substituted with thighs for a juicier result.
  • 1 medium onion, sliced
  • 1 medium bell pepper, sliced
  • 2 cloves garlic, minced

For the Sauce

  • 1 can diced tomatoes (28 oz)
  • 1 cup chicken broth Can substitute with vegetable broth or water.

Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper Always taste the sauce before serving.

For Garnish

  • 1/4 cup fresh parsley, chopped

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • Layer the sliced onion, bell pepper, and minced garlic on top of the chicken.
  • Add the diced tomatoes and chicken broth over the vegetables and chicken.
  • Sprinkle with oregano, basil, salt, and pepper.
  • Gently stir the mixture to combine the ingredients evenly.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 4 hours. The chicken should be cooked through and tender.
  • Once cooked, shred the chicken in the slow cooker using two forks and mix it with the sauce.
  • Garnish with fresh parsley before serving.

Notes

Use good quality chicken for enhanced flavor. Avoid overcrowding the slow cooker for even cooking. Adjust cooking time for thicker chicken breasts. Consider adding other vegetables like mushrooms or zucchini for added nutrition and flavor.
