Ingredients
  

Meat and Veggies

  • 1 lb ground beef or lamb
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas

Mashed Potato Topping

  • 2 cups mashed potatoes

Sauce

  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce

Seasoning

  • Salt and pepper to taste

  • 1 tbsp olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until they become translucent and fragrant, about 3-4 minutes.
  • Add the ground meat to the skillet. Cook until browned, stirring frequently to break it apart – this should take about 5-7 minutes.
  • Incorporate the chopped carrots and continue to cook for roughly 5 minutes until they start to soften.
  • Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Mix well and let simmer for about 10 minutes.
  • Add the frozen peas to the meat mixture and stir until everything is well combined.
  • Transfer the meat mixture into a baking dish. Evenly spoon the mashed potatoes over the top.
  • Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top of the mashed potatoes is lightly golden.
  • Allow the Shepherd's Pie to cool for a few minutes before serving.

Notes

For a healthier option, substitute ground beef with ground turkey or lentils. Russet or Yukon gold potatoes work best for mashed potatoes due to their creamy texture. Don't overcook the vegetables; they should be tender but not mushy.
