  • 1 tablespoon honey Enhances caramelization and sweetness.
  • 4 cloves garlic, minced Intensifies the dish's flavor.
  • 1 teaspoon fresh ginger, minced or grated Adds a warm, spicy note.
  • to taste salt & pepper Essential for enhancing flavors.

Pineapple

  • 1 cup fresh pineapple, diced Opt for ripe pineapple for the best flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) for crispy chicken skin.
  • In a bowl, combine olive oil, soy sauce, honey, garlic, and ginger. Whisk until well mixed.
  • Season chicken thighs with salt and pepper. Place in a baking dish or resealable bag and pour the marinade over. Ensure they are well coated and let marinate for at least 15 minutes at room temperature.
  • Add the diced pineapple around the chicken in the baking dish.

Cooking

  • Roast the chicken in the preheated oven for about 40-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  • Baste the chicken halfway through roasting for extra flavor.
  • Remove from the oven and let the chicken rest for a few minutes before serving.
