  • 1 lb lean ground beef Use lean for a healthier option.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 piece bell pepper, diced
  • 1 piece onion, diced
  • 2 cups enchilada sauce Store-bought or homemade.
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortillas (corn or flour)

Spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Preparation

  • In a large pan over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  • Add diced onion and bell pepper to the pan and cook until soft, about 3-4 minutes.
  • Stir in black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 2 minutes.
  • Pour in the enchilada sauce and bring to a simmer. Stir to combine and bubble gently for about 2 minutes.
  • Layer tortillas in the pan, ensuring they overlap slightly. Top with the beef mixture, spreading evenly.
  • Generously sprinkle shredded cheese on top.
  • Cover the pan with a lid and cook on low heat for about 10 minutes, or until cheese is melted and bubbly.

Notes
