  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/4 cup honey or maple syrup
  • 1/2 cup blueberries (fresh or dried)
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 scoop protein powder (optional for added protein)
  • 1 pinch salt

Preparation

  • In a large bowl, combine rolled oats, almond butter, honey (or maple syrup), and protein powder if using. Stir until well blended.
  • Mix in the blueberries, lemon zest, lemon juice, and a pinch of salt. Ensure everything is evenly distributed.
  • Stir the mixture until all ingredients are fully combined. It should be sticky but moldable.
  • Using your hands, take small portions of the mixture and roll them into balls about 1 inch in diameter.
  • Place the protein bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
  • Once set, transfer the bites to an airtight container and store in the refrigerator for up to a week.

Notes

For a nut-free version, consider using sunflower seed butter. Adjust ingredients based on preferences or dietary needs. Make sure your blueberries are ripe for the best flavor.
