Dressing and Seasoning

  • 3 tablespoons Olive Oil Provides a rich base for the dressing

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  • While the pasta is cooling, wash and cut the cucumber into jack-o'-lantern shapes. Halve the cherry tomatoes and chop the bell peppers into bite-sized pieces.

Combination and Dressing

  • In a large bowl, combine the cooled pasta, prepared vegetables, and diced mozzarella cheese.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and your choice of herbs until well combined.
  • Drizzle the dressing over the pasta salad and toss gently to coat all ingredients evenly.

Serving

  • Chill before serving or serve at room temperature.

Notes

Let the salad chill in the refrigerator for at least 30 minutes before serving for the flavors to meld. Use fresh herbs for the best flavor—and avoid adding the dressing too early to prevent sogginess.
