  • 4 cloves garlic, minced

  • 1 tablespoon olive oil Consider using melted butter for an even richer taste.
  • Salt and pepper to taste Season generously for depth of flavor.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a small bowl, mix the minced garlic, lemon juice, olive oil, salt, and pepper.
  • Generously rub the garlic mixture all over the chicken, getting under the skin and inside the cavity.
  • Stuff the cavity with lemon slices and place a couple on top.
  • Tie the legs with kitchen twine and tuck the wings under the body.

Cooking

  • Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C), basting halfway through.
  • Let the chicken rest for 10-15 minutes before carving.
  • Serve with your favorite sides.
