Ingredients

Main Ingredients

  • 2 cups cooked rice (white, brown, or jasmine rice work well)
  • 1 lb chicken breast, diced (boneless, skinless for quick cooking)
  • 1 can coconut milk (13.5 oz, full-fat for creaminess)
  • 1 tablespoon soy sauce (adds depth of flavor)
  • 1 tablespoon olive oil (for sautéing)
  • 1 teaspoon garlic, minced (fresh is best for flavor)
  • 1 teaspoon ginger, minced (adds warmth and zing)
  • to taste salt and pepper adjust according to preference
  • Chopped cilantro for garnish (optional, fresh flavor)

Instructions

Preparation

  • In a skillet, heat olive oil over medium heat. Add minced garlic and ginger, sautéing until fragrant, about 1-2 minutes. Be careful not to burn them, as burnt garlic can turn bitter.
  • Add the diced chicken to the skillet. Season with salt and pepper, then cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. The chicken should no longer be pink in the center.
  • Pour in the coconut milk and soy sauce. Stir well to combine, and let the mixture simmer for another 5-7 minutes. The sauce should thicken slightly, enveloping the chicken.
  • Spoon the coconut chicken mixture over the cooked rice in bowls. The rice serves as a perfect base to soak up the delicious sauce.
  • Top with chopped cilantro right before serving for a fresh touch. Enjoy your meal!

Notes

Don't overcook the chicken to keep it juicy and tender. Adjust the heat as necessary for a gentle simmer. Consider adding lime juice or chili flakes for added flavor.
