  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are soft and fragrant, about 5-7 minutes. Avoid browning the garlic to prevent bitterness.
  • Stir in the shredded chicken and chicken broth. Bring the mixture to a boil, scraping up any bits stuck to the pot for added flavor.
  • Once boiling, add the ditalini pasta. Cook according to package instructions, typically around 8-10 minutes, until al dente. Stir frequently to prevent sticking.
  • Season the soup with salt and pepper to taste. Ladle into bowls and garnish with fresh herbs if desired. Serve hot and enjoy.

Notes

Monitor cooking time carefully to avoid overcooking the pasta. Using rotisserie chicken speeds up preparation. You can substitute or add vegetables like spinach or peas for more nutrition.
