Liquids and Seasoning

  • 1 cup low-sodium chicken broth Keeps the dish moist.

Preparation

  • Season the chicken breasts with salt and pepper on both sides.

Combine the Ingredients

  • Place the chicken in the crockpot. Layer the diced bell pepper, chopped onion, cherry tomatoes, and Kalamata olives on top.

Add Garlic and Herbs

  • Sprinkle the minced garlic, dried oregano, and thyme over the chicken and vegetables.

Pour in Broth and Oil

  • Drizzle the olive oil over the ingredients and pour in the chicken broth.

Set the Crockpot

  • Cover the crockpot and set it to low for 6-8 hours or high for 4-5 hours.

Check for Doneness

  • Ensure the chicken has reached an internal temperature of 165°F.
