  • 1 cup orzo pasta
  • 1 lb chicken breast, diced

Vegetables

  • 1 cup asparagus, chopped

Liquids

  • 2 cups chicken broth Vegetable broth can be used for a vegetarian option.
  • 1 cup heavy cream Can be replaced with half-and-half or a plant-based milk for a lighter version.

Dairy

  • 1 cup shredded cheese (such as mozzarella or cheddar) Use shredded cheese for quicker melting.

Seasoning

  • Salt and pepper to taste
  • Olive oil For sautéing.

Preparation

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the chopped asparagus and cook for 2-3 minutes until they start to soften.
  • Add the orzo and chicken broth, bringing the mixture to a boil.
  • Reduce the heat, cover, and let it simmer for 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  • Stir in the heavy cream and cheese, mixing until melted and creamy.
  • Taste the mixture and season with salt and pepper according to your preference.
  • Serve hot and enjoy your easy dinner!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze the dish for up to 2 months.
