Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions, diced carrots, and celery. Sauté for about 5 minutes or until the vegetables are soft.
  • Stir in the minced garlic and cook for another minute, allowing the flavors to meld.

Cooking

  • Pour in the chicken broth and bring the mixture to a simmer.
  • Stir in the rice and let it cook until tender, about 15 minutes—check occasionally to ensure it doesn’t stick.
  • Add the shredded chicken and pour in the heavy cream (or milk). Stir well to combine, and season with salt and pepper.
  • Allow the soup to simmer for an additional 5-10 minutes until heated through and flavors melded.
  • Serve hot, garnished with fresh herbs if desired.

Notes

Use homemade chicken broth for richer flavor. Choose long-grain rice for fluffier texture. Adjust consistency based on preference.
