Instructions
 

Preparation

  • Place the chicken breasts in your slow cooker, ensuring they’re arranged evenly.
  • Sprinkle the ranch seasoning mix evenly over the chicken, ensuring every piece is coated.
  • Place the cream cheese on top of the chicken, allowing it to melt and infuse the flavors.
  • Pour the chicken broth around the sides of the chicken to keep it moist during cooking.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  • Once cooked, use two forks to shred the chicken directly in the slow cooker. It should be tender and fall apart easily.
  • Stir in the shredded cheddar cheese and crumbled bacon until well combined. Allow the cheese to melt into the warm mixture.

Serving

  • Top with chopped green onions. Serve on toasted bread, in tortillas, or over rice for a hearty meal.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Freeze chicken mixture for up to 3 months.
