  • 1 lb chicken breast, diced Boneless, skinless chicken thighs can be a juicier alternative.
  • 2 cups fresh spinach Fresh is recommended, but you can also use frozen spinach.
  • 1 cup feta cheese, crumbled For a milder flavor, you could substitute goat cheese.
  • 3 cloves garlic, minced Fresh garlic greatly enhances the dish’s flavor.
  • 2 tablespoons olive oil Use extra virgin olive oil for better flavor.
  • Salt and pepper to taste
  • Red pepper flakes (optional for added heat)

Preparation

  • Boil the pasta according to package instructions until it’s al dente. Drain and set aside.
  • In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  • Add the diced chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  • Stir in the fresh spinach and cook until just wilted, about 2-3 minutes.
  • Add the cooked pasta and crumbled feta cheese to the skillet. Season with salt, pepper, and red pepper flakes if using. Toss everything together until well combined.
  • Spoon the pasta into bowls and serve warm.

Notes

Don’t overcook the pasta and use fresh ingredients for the best flavor. Adjust seasonings to your taste.
