Ingredients
  

For the Soup

  • 1 pound chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion diced
  • 4 cups chicken broth For richer flavor, use low-sodium or homemade broth.
  • 1 cup water
  • 2 cups mixed vegetables (peas, corn, etc.) Frozen mixed vegetables work well.
  • 1 tablespoon fresh parsley, chopped

For the Dumplings

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk Can use almond milk for dairy-free dumplings.

Instructions
 

Preparation

  • In a large pot over medium heat, add a splash of oil and sauté the diced onion, sliced carrots, and sliced celery until they are tender, about 5-7 minutes.
  • Add the diced chicken to the pot. Cook until the chicken is no longer pink, about 5 minutes.
  • Pour in the chicken broth and water. Bring the mixture to a boil.
  • In a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, whisk together the milk and egg. Combine both mixtures to form a sticky dough.

Cooking

  • Once the soup is boiling, use spoonfuls of the dumpling dough and drop them into the soup. Reduce heat to a simmer and cook for about 10 minutes, until the dumplings are cooked through.
  • Stir in the mixed vegetables and fresh parsley. Allow the soup to heat through for another 5 minutes before serving hot.

Notes

Avoid overmixing the dumpling dough to keep them light and fluffy. Simmer the dumplings gently to prevent density.
