  • 4 cups chicken broth Choose a rich quality broth.
  • 1 cup carrots, diced Adds sweetness and color.

  • 2 cups heavy cream For richness.

For the Dumplings

  • 1 can refrigerated biscuit dough Creates fluffy dumplings.
  • 1 teaspoon dried thyme For herby flavor.
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Optional; adds freshness.

Preparation

  • In a large pot over medium heat, add the diced onion, carrots, and celery. Sauté until the vegetables begin to soften, about 5-7 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Add the shredded rotisserie chicken, heavy cream, dried thyme, salt, and pepper to the pot; stir to combine.
  • Cut the biscuit dough into bite-sized pieces and drop them into the simmering soup.
  • Cook for about 10-12 minutes until the dumplings are cooked through and fluffy.
  • Taste the soup and adjust seasoning if necessary, adding more salt, pepper, or thyme to suit your taste.
  • Serve hot, garnished with fresh parsley, if desired.

Notes

Don’t overcook the dumplings to maintain their texture. Use good quality broth for the best flavors.
