Ingredients
  

For the Noodles and Chicken

  • 8 oz chow mein noodles Fresh noodles offer the best texture.
  • 1 lb chicken breast, thinly sliced Feel free to use boneless thighs for richer flavor.

For the Vegetables

  • 1 cup bean sprouts
  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced Any color.
  • 2 each green onions, chopped

For the Sauce

  • 4 tbsp soy sauce You can substitute with tamari or coconut aminos.
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced

Preparation

  • Cook chow mein noodles according to package instructions. Drain and set aside.
  • In a wok, heat the sesame oil over medium-high heat.
  • Add minced garlic and ginger to the hot oil and sauté for 1 minute, stirring often to prevent burning.
  • Add the sliced chicken breast to the wok and cook until browned and fully cooked through, about 5-7 minutes.
  • Stir in the carrots, bell peppers, and bean sprouts. Cook for about 3-4 minutes, until the veggies are tender but still crisp.
  • Add the cooked noodles and soy sauce to the wok. Toss everything together until the noodles are evenly coated in the sauce.
  • Stir in the chopped green onions and remove from heat.
  • Enjoy your delicious Chicken Chow Mein right away!

Notes

Chop your veggies and slice the chicken beforehand to streamline cooking. Store leftovers in an airtight container in the fridge for up to 3 days. Can freeze for up to 2 months.
