A delightful dish combining tender marinated chicken with fresh vegetables, soft vermicelli noodles, and vibrant herbs.

Ingredients

  • 1 pound Chicken thighs (or breast)
  • 2 stalks of Lemongrass, minced
  • 3 cloves Garlic, minced
  • 3 tablespoons Fish sauce
  • 1 tablespoon Sugar
  • 8 ounces Vermicelli noodles
  • Crisp vegetables (such as carrots, cucumbers, and bell peppers), sliced
  • Fresh herbs (like mint and cilantro), roughly chopped
  • Chili sauce, for drizzling
  • 2 tablespoons Vinegar (for nuoc cham)

Instructions

  1. Marinate the chicken by combining it with lemongrass, garlic, fish sauce, and sugar. Let it marinate for at least 30 minutes.
  2. Prepare the vermicelli noodles according to the package instructions, then rinse under cold water.
  3. Cook the marinated chicken over medium-high heat until fully cooked, about 6-8 minutes per side.
  4. Assemble the bowl by combining noodles, sliced chicken, vegetables, and herbs.
  5. Dress with nuoc cham sauce made from vinegar, chili sauce, and additional fish sauce.
  6. Toss gently and serve immediately, garnished with extra herbs.

Notes

Allow more time for marinating for better flavor. Avoid overcooking the chicken to keep it tender.
