A comforting and nourishing soup combining Italian sausage, savory vegetables, and creamy white beans, perfect for busy weeknights or chilly days.

Ingredients

  • 1 pound Italian sausage (spicy or mild)
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 6 cups fresh spinach (or kale)
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Cook for about 5-6 minutes, until softened.
  2. Add garlic: Stir in minced garlic and cook for another minute, just until fragrant.
  3. Brown the sausage: Add Italian sausage and break it apart with a spoon. Cook until browned and fully cooked, about 7-8 minutes.
  4. Combine ingredients: Pour in chicken or vegetable broth. Add drained white beans, dried oregano, salt, and pepper. Stir to combine.
  5. Simmer: Bring the soup to a gentle simmer. Let it cook for about 20 minutes.
  6. Add greens: Before serving, stir in fresh spinach until just wilted, about 2-3 minutes.
