Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour (or gluten-free flour)
2 eggs, beaten
1 cup breadcrumbs (plain or Italian-seasoned)
1/2 cup grated Parmesan cheese
1/4 cup olive oil
2 cups marinara sauce
1 cup shredded mozzarella cheese
Instructions
Prepare the chicken: Pound the chicken breasts to an even thickness and season both sides with salt and pepper.
Set up a breading station: Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with Parmesan in a third bowl.
Bread the chicken: Dredge each breast in flour, dip in eggs, and coat with the breadcrumb mixture, pressing gently to adhere.
Cook the chicken: Heat olive oil in a skillet over medium heat and cook breaded chicken for 4-5 minutes on each side until golden and cooked through. Transfer to a baking dish.
Add sauce and cheese: Spoon marinara sauce over each chicken breast and sprinkle with shredded mozzarella.
