A wonderfully comforting soup made with chicken breast, coconut milk, and peanut butter, delivering rich, creamy flavors with a hint of spice.

Ingredients

  • 1 lb chicken breast, diced
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 1/4 cup peanut butter
  • 2 tablespoons chili paste
  • 2 tablespoons soy sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 lime, juiced
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Sauté the chopped onion, minced garlic, and grated ginger over medium heat until fragrant, about 3-4 minutes.
  2. Add the diced chicken to the pot and cook until it is browned on all sides, approximately 5-7 minutes.
  3. Stir in the chili paste, cooking for another minute to infuse the flavors.
  4. Pour in the chicken broth and coconut milk, stirring well to combine.
  5. Add the peanut butter and soy sauce to the soup, mixing until smooth and fully incorporated.
  6. Lower the heat and let the soup simmer for 15-20 minutes.
  7. Add lime juice, and season with salt and pepper to taste before serving.
  8. Serve the soup hot, garnished with fresh cilantro.
