Ingredients

  • 2 Sweet Potatoes, cut into fun shapes
  • 2 Beetroot, cut into witch’s hats
  • 2 Potatoes, cut into ghost shapes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • Spices (optional): Paprika, garlic powder, or herbs

Instructions

  1. Preheat the oven to 400°F (200°C) to ensure even roasting.
  2. Prepare the sweet potatoes by slicing them into thick wedges and carving faces.
  3. Shape the beetroot into witch’s hats using a cone or triangle shape.
  4. Cut the potatoes into ghost shapes, adding eyes and a mouth if desired.
  5. Toss all the cut vegetables with olive oil, salt, and pepper in a large bowl.
  6. Arrange the seasoned vegetables onto a baking sheet in a single layer.
  7. Roast in the preheated oven for 25-30 minutes, turning once halfway through, until golden and tender.
  8. Serve warm as a nutritious snack or side dish.
