A delightful and vibrant dish that combines juicy shrimp with al dente pasta, bright lemon, and aromatic garlic.

Ingredients

  • 8 ounces spaghetti or linguine
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. Season the shrimp with salt and pepper while the pasta is cooking, ensuring they are evenly coated.
  3. Heat the olive oil over medium heat in a large skillet. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and opaque. Remove from heat.
  5. Combine the cooked pasta, lemon juice, and red pepper flakes (if using) in the skillet with the shrimp. Toss together gently, adding reserved pasta water as needed.
  6. Adjust seasoning with salt and pepper if needed, and garnish with parsley. Serve immediately.
