Ingredients

  • 2 cups white granulated sugar
  • 2 cups all-purpose flour (sifted)
  • 3/4 cup black cocoa powder (sifted)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs (room temperature)
  • 1 cup buttermilk (room temperature)
  • 1 cup coffee (hot)
  • 1/2 cup canola oil
  • 2 teaspoons vanilla extract
  • 2 cups fresh blackberries
  • 2 tablespoons white granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cinnamon stick
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar (sifted)
  • 1 cup black cocoa powder (sifted)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Chocolate skulls (for garnish)
  • Fresh blackberries (for garnish)
  • Dried rose petals (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the sugar, flour, black cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In a separate bowl, mix together the eggs, buttermilk, hot coffee, canola oil, and vanilla extract.
  4. Add the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
  6. In a saucepan, combine blackberries, sugar, lemon juice, lemon zest, cinnamon stick, and water. Cook over medium heat until the blackberries break down and the mixture thickens, about 10 minutes. Remove from heat and stir in the cornstarch. Allow to cool.
  7. In a mixing bowl, beat the cream cheese and softened butter until smooth. Gradually add powdered sugar and black cocoa powder while mixing. Finish with salt and vanilla extract. Mix until creamy and fluffy.
  8. Place one layer of the black velvet cake on a serving plate and spread a layer of frosting over the top. Spoon some blackberry compote over the frosting, then place the second layer of cake on top. Frost the top and sides of the entire cake with the remaining chocolate frosting.
  9. Decorate the top of your cake with chocolate skulls, fresh blackberries, and dried rose petals for a spooky touch.
