Spatchcock Chicken in the Oven

A fantastic way to achieve perfectly roasted chicken with crispy skin and juicy meat in less time than traditional roasting.

Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • Salt (to taste)
  • Pepper (to taste)
  • Olive oil (for drizzling)
  • Herbs (such as rosemary, thyme, or parsley – fresh or dried)
  • Lemon (optional, for added brightness)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place the whole chicken breast-side down on a cutting board.
  3. Using kitchen shears, cut along both sides of the backbone and remove it.
  4. Turn the chicken over so the breast side is facing up and press down firmly on the breastbone to flatten it.
  5. Generously season the chicken with salt, pepper, and your chosen herbs.
  6. Drizzle olive oil over the chicken and rub it into the skin.
  7. Place the chicken on a baking sheet or roasting pan.
  8. Roast in the preheated oven for about 45-60 minutes, until the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for about 10 minutes before carving.
  10. Carve the chicken and serve it with your favorite sides.

Notes

Use sharp kitchen shears for easier cutting. Monitor internal temperature to ensure proper doneness.
