A delightful blend of flavors and textures, this one-dish casserole combines chicken, zesty spices, and creamy cheese, making it a perfect weeknight meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes with green chilies
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, half of the shredded cheese, chili powder, cumin, salt, and pepper in a large mixing bowl.
  3. Transfer the mixture into a greased baking dish, spreading it evenly.
  4. Add the remaining shredded cheese on top of the casserole.
  5. Bake for 25-30 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro before serving.

Notes

Use rotisserie chicken for quicker prep. Allow the casserole to rest for 5 minutes after baking for easier serving.
