A delightful treat combining rich chocolate cake with a light, fluffy meringue topping, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup hot brewed coffee
  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup powdered sugar
  • 1/2 cup chocolate chips (optional)
  • Decorative cookies (like corpse finger and moss cookies)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Mix dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, and salt.
  3. Combine wet ingredients in another bowl: melted butter, eggs, vanilla extract, and hot brewed coffee.
  4. Pour the wet mixture into dry ingredients and stir gently until just combined.
  5. Bake in the preheated oven for about 30-35 minutes, until a toothpick comes out clean.
  6. Make meringue by beating egg whites and cream of tartar until foamy, then gradually adding powdered sugar until stiff peaks form.
  7. Spread meringue over the cooled cake and optionally sprinkle with chocolate chips.
  8. Bake again at 200°F (93°C) for about 1 hour, until meringue is set and lightly browned.
  9. Cool completely before decorating with cookies.

Notes

Avoid over-mixing the batter and ensure the cake cools completely before adding meringue.
