Ingredients

  • 2 lbs chicken thighs or breasts
  • 1 cup coconut milk
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • Chopped green onions and peanuts for serving

Instructions

  1. Add the chicken to the slow cooker: Place the chicken thighs or breasts into the bottom of the slow cooker, ensuring they are evenly spread out.
  2. Prepare the sauce: In a mixing bowl, whisk together the coconut milk, peanut butter, soy sauce, honey, rice vinegar, minced garlic, and grated ginger until the mixture is smooth and well combined.
