Ingredients

  • 1 lb shredded chicken breasts
  • 1 cup rice (long-grain white or brown)
  • 4 cups chicken broth
  • 1/4 cup lemon juice (about 2 lemons)
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Combine Ingredients: In a slow cooker, add the shredded chicken, rice, chicken broth, lemon juice, diced celery, and carrots.
  2. Season It Up: Sprinkle in the dried oregano, garlic powder, and add salt and pepper to taste.
  3. Set and Forget: Cover the slow cooker and cook on low for 6-8 hours or until the rice is tender and the chicken is thoroughly cooked. Make sure to check the rice’s texture.
  4. Final Touches: After cooking, stir well to combine all flavors, and garnish with fresh parsley before serving.

Notes

Using rotisserie chicken can save time and add extra flavor. You can replace long-grain rice with quinoa or a gluten-free option if preferred.
