Ingredients

  • 1 lb. boneless, skinless chicken breasts/thighs
  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 1 (4 oz.) can diced green chiles
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz. cream cheese (softened)
  • 2 cups chicken broth
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice

Instructions

  1. Prepare the base: In your slow cooker, combine the drained cannellini beans, drained great northern beans, chopped onion, minced garlic, diced green chiles, cumin, oregano, salt, black pepper, and chili powder. Stir well to combine the ingredients.
  2. Add chicken: Place the chicken breasts or thighs on top of the bean mixture, ensuring they are fully covered by the sauce.
  3. Incorporate chicken broth: Pour the chicken broth over everything in the slow cooker, allowing it to seep into the bean mixture.
  4. Cook: Cover the slow cooker and cook on low for 7 hours or on high for 4 hours. The chicken should be tender and easily shred with a fork when done.
