Ingredients
2 boneless, skinless chicken breasts
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilies
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Tortilla strips (for serving)
Chopped cilantro (for garnish)
Lime wedges (for serving)
Instructions
Combine the chicken breasts, black beans, corn, diced tomatoes, chicken broth, onion, garlic, cumin, chili powder, salt, and pepper in a slow cooker. Stir gently to mix.
Set the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
Shred the chicken from the slow cooker using two forks and return it to the soup.
Serve the soup into bowls and top with tortilla strips, cilantro, and lime juice.
