A hassle-free, flavorful meal of tender and juicy chicken breasts cooked in a slow cooker. Perfect for meal prep and adaptable to various spices and ingredients.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5-2 pounds)
  • 1 cup chicken broth (or vegetable broth/water)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare the chicken: Trim any excess fat and pat dry.
  2. Season the chicken: Mix garlic powder, onion powder, paprika, salt, and pepper, and rub it over the chicken.
  3. Layer ingredients in the slow cooker: Pour olive oil, place chicken on top, and add chicken broth around it.
  4. Slow cook: Cover and set to low for 4-6 hours or high for 2-3 hours until chicken reaches 165°F (75°C).
  5. Shred and serve: Remove chicken to let it rest, then shred or slice as desired.
