A comforting chicken soup with sun-dried tomatoes, creamy goodness, and hearty gnocchi that’s perfect for chilly evenings.

Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 1/2 cup Sun-dried tomatoes, oil-packed
  • 1/2 cup Pesto
  • 2 cups Fresh spinach
  • 1 lb Potato gnocchi
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 Crusty baguette, for serving
  • 1/2 cup Dry white wine (or chicken broth)
  • Olive oil, for cooking

Instructions

  1. Cook the chicken: In a large pot over medium heat, add a drizzle of olive oil and cook the chicken until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  2. Sauté the vegetables: In the same pot, stir in the sun-dried tomatoes, pesto, and fresh spinach. Cook until the spinach wilts, about 2-3 minutes.
  3. Add the gnocchi: Pour in the potato gnocchi and add enough water or chicken broth to cover the ingredients, about 4 cups.
  4. Simmer the soup: Bring the mixture to a boil, then reduce the heat and simmer until the gnocchi are tender, about 5-7 minutes.
  5. Stir in cream and cheese: Lower the heat and mix in the cream and Parmesan cheese, stirring until melted and smooth. Adjust seasoning with salt and pepper as needed.
  6. Serve: Ladle the soup into bowls and serve hot with slices of crusty baguette and a glass of white wine.
