Ingredients
2 cups all-purpose flour
1 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup chopped rat meat (or substitute with ground pork or chicken)
1/4 cup chopped green onions
1 tablespoon soy sauce
1 tablespoon sesame oil
Instructions
In a mixing bowl, combine flour, water, and salt. Stir until a dough forms, then knead until smooth. Let the dough rest for 30 minutes to relax the gluten.
In another bowl, mix together the chopped rat meat (or chosen substitute), green onions, soy sauce, and sesame oil until well combined.
On a floured surface, roll out the rested dough until it’s thin. Use a round cutter (like a glass) to cut the dough into circles.
Place a tablespoon of the filling in the center of each dough circle.
Fold the dough over the filling to create a half-moon shape. Pinch the edges firmly to seal, ensuring no filling escapes.
Bring a pot of water to boil. Use a steamer basket to steam the dumplings for 10-12 minutes, or until the dough is tender and cooked through.
Serve the dumplings hot with your favorite dipping sauce, and enjoy the delicious flavors.
Notes
Resting the dough is crucial for a tender texture. Experiment with different fillings for more flavor.
