Delicious pumpkin pancakes served with a sweet cinnamon syrup, perfect for a cozy fall breakfast.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Whipped cream (for serving)
  • Chocolate chips or sprinkles (for decoration)

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Combine wet ingredients: In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Combine mixtures: Pour the wet ingredients into the dry ingredients. Stir until just combined; it’s okay if there are a few lumps.
  4. Add color (optional): If you want some fun colors in your pancakes, divide the batter into separate bowls and stir in food coloring to create the desired colors.
  5. Heat the skillet: Preheat a non-stick skillet or griddle over medium heat.
  6. Cook pancakes: Pour batter onto the skillet to form pancakes. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook until golden brown on the other side, another 2-3 minutes.
  7. Serve: Transfer the pancakes to a plate, top with whipped cream, and decorate with chocolate chips or sprinkles as desired.

Notes

Don’t overmix the batter to ensure fluffy pancakes and use a suitable heat for cooking.
