A comforting and family-friendly dish combining tender chicken, vibrant broccoli, and creamy cheese, all in one pot.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
  2. Brown chicken: Add the diced chicken breast to the skillet, season with salt and pepper, and cook until browned on all sides, approximately 5-7 minutes.
  3. Add rice and broth: Stir in the rice and chicken broth, then add the broccoli florets. Bring the mixture to a simmer.
  4. Cover and cook: Cover the skillet and reduce heat to low. Cook for about 15-20 minutes until the rice is tender and most of the liquid has been absorbed.
  5. Melt cheese: Remove from heat, stir in the shredded cheese until it melts and becomes creamy.

Check the rice doneness if using brown rice and add more broth if necessary. Add spices for extra flavor and let the casserole rest before serving.
