A delightful one-pan dish that combines tender chicken, vibrant broccoli, and creamy cheese for a quick and easy weeknight meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh broccoli florets
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Sauté chicken in a large skillet with olive oil, seasoned with salt, pepper, garlic powder, and onion powder for 5-7 minutes until browned.
  2. Remove the chicken from the pan and set aside.
  3. Add rice to the same skillet and stir for 1-2 minutes until lightly toasted.
  4. Pour in chicken broth, bringing it to a boil.
  5. Reduce to a simmer and add the cooked chicken and broccoli; stir to combine.
  6. Cover and simmer for 15 minutes until the rice is cooked and has absorbed the liquid.
  7. Stir in cheddar cheese until melted, then remove from heat and let sit before serving.
