Ingredients

  • 1 whole chicken (about 3-4 lbs), cut into pieces
  • 6 cups chicken broth or stock
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • Fresh parsley, for garnish (optional)

Instructions

  1. Prepare the Chicken: In a large pot, combine the chicken pieces, chicken broth, onion, carrots, celery, garlic, thyme, bay leaf, and seasoning. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about 30-40 minutes, until the chicken is cooked through and tender.
  2. Remove and Shred Chicken: Carefully remove the chicken from the pot and let it cool slightly. Once cool enough to handle, shred the meat from the bones and return the shredded chicken to the pot. Discard the bones and bay leaf.
  3. Make the Dumpling Batter: In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate bowl, combine the milk and melted butter, then add to the dry ingredients. Stir until just combined; the batter will be thick.
  4. Add Dumplings: Return the pot to a gentle simmer. Drop spoonfuls of the dumpling batter over the surface of the simmering broth. Cover the pot and let the dumplings cook for about 15 minutes without lifting the lid. They should become fluffy and cooked through.
  5. Final Touches: Taste the broth and adjust seasoning if necessary. Ladle the chicken and dumplings into bowls and sprinkle with fresh parsley if desired.
