Delightful oatmeal cookie sandwiches filled with creamy goodness, perfect for sharing or enjoying as a special dessert.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups rolled oats (not instant)
  • 1 cup unsalted butter, softened (for cream filling)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for cream filling)
  • Food coloring (optional)
  • Sprinkles or decorative toppings (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry ingredients: In a bowl, whisk together the flour, baking soda, and salt until evenly combined.
  3. Cream the butter and sugars: In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until smooth and fluffy.
  4. Add eggs and extracts: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla and almond extracts until combined.
  5. Combine each mixture: Gradually add the flour mixture to the creamed mixture, mixing on low speed until just combined.
  6. Incorporate oats: Stir in the rolled oats until evenly distributed throughout the dough.
  7. Shape the cookies: Drop spoonfuls of dough onto ungreased baking sheets, ensuring ample space between each.
  8. Bake the cookies: Bake in the preheated oven for 9 to 11 minutes, or until the edges are golden brown and the centers appear set but slightly soft.
  9. Cool the cookies: Allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For a vegan version, substitute butter with vegan butter and use flax eggs instead of regular eggs. Adjust baking time as needed depending on your oven’s temperature variance.
