A comforting and creamy chicken noodle soup that is quick to prepare, perfect for busy nights and family-friendly meals.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh parsley, for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the broth: Add the 4 cups of chicken broth to the pot. Bring the mixture to a boil over medium-high heat.
  4. Cook the noodles: Once boiling, stir in the 2 cups of egg noodles. Reduce the heat to medium and simmer for about 6-8 minutes, or until the noodles are al dente.
  5. Combine chicken and cream: Add the shredded chicken and pour in the 1 cup of heavy cream. Stir to combine and season with salt and pepper to taste.
  6. Heat through: Allow the soup to simmer for another 3-5 minutes, until heated through.
  7. Garnish and serve: Ladle the soup into bowls, garnish with fresh parsley, and enjoy!

You can use rotisserie chicken for quicker preparation or swap heavy cream for a lighter option like half-and-half if desired.
