Ingredients
2 pounds boneless, skinless chicken breasts or thighs
8 ounces cream cheese
4 cups chicken broth
6 strips bacon, cooked and crumbled
1 packet (about 1 ounce) ranch dressing mix
1 cup shredded cheddar cheese
1 cup spinach or broccoli (optional)
Instructions
Place the chicken breasts or thighs in the bottom of the slow cooker.
Add the cream cheese, chicken broth, crumbled bacon, ranch dressing mix, and shredded cheddar cheese on top. Stir lightly without disturbing the chicken.
Optional: Add spinach or broccoli for extra nutrition.
Cook on low for 6 to 8 hours, until the chicken is tender and shreds easily.
Shred the chicken with two forks and return it to the soup to combine.
Serve the soup warm in bowls and enjoy!
Notes
Don’t overcook the chicken and consider using thighs for better moisture retention.
