Ingredients

  • 1 cup orzo pasta
  • 1 lb chicken breast, diced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 5 minutes or until the vegetables are softened.
  2. Add garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Cook the chicken: Add the diced chicken breast to the pot. Cook for about 5-7 minutes, stirring occasionally.
  4. Add broth and bring to boil: Pour in the chicken broth and bring the mixture to a boil over high heat.
  5. Cook orzo: Stir in the orzo pasta and reduce the heat to medium. Cook for another 10 minutes, or until the orzo is tender.
  6. Finish with lemon: Remove the pot from heat, and stir in the lemon juice. Season with salt and pepper to taste.
  7. Garnish and serve: Ladle the soup into bowls and garnish with fresh parsley before serving hot.
