Ingredients

  • 4 large tomatoes (ripe, diced)
  • 1 small onion (finely chopped)
  • 2 cloves of garlic (minced)
  • 1 jalapeño (seeded and finely chopped, adjust to taste)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon salt (to taste)
  • Optional: Fresh corn or black beans (for extra flavor and texture)

Instructions

  1. Dice the ripe tomatoes into small pieces.
  2. Chop the small onion and rinse under cold water if milder taste is desired.
  3. Mince the garlic cloves and add to the mixing bowl.
  4. Add the finely chopped jalapeño.
  5. Combine the diced tomatoes, chopped onion, minced garlic, and jalapeño in a large bowl.
  6. Stir in the chopped cilantro and lime juice, sprinkle with salt, and mix well.
  7. Taste and adjust lime juice or salt according to preference.
  8. Chill the salsa for at least 15 minutes to allow flavors to meld before serving.
