A comforting blend of flavors, this creamy mushroom soup is perfect on its own or as a versatile ingredient in various dishes.

Ingredients

  • 1 cup mushrooms, chopped
  • 1/4 cup onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chicken or vegetable broth
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Sauté the veggies: In a saucepan, melt the butter over medium heat. Add the chopped onions and mushrooms. Cook until softened, about 5 minutes.
  2. Make the roux: Sprinkle the flour over the vegetables and stir well, cooking for about 1 minute.
  3. Add the liquids: Gradually pour in the chicken or vegetable broth while whisking continuously. Add the milk next, whisking until smooth.
  4. Cook until thickened: Bring to a simmer, stirring often, and cook for about 5-7 minutes until the soup thickens.
  5. Season to taste: Remove from heat and add salt and pepper to taste.

Notes

For richer flavor, use cremini or shiitake mushrooms. For dairy-free, substitute milk with almond or coconut milk.
