A versatile and comforting kitchen staple perfect for busy weeknight dinners, this homemade cream of anything soup forms a delicious base for countless dishes.

Ingredients

  • 4 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt to taste
  • Freshly ground pepper to taste
  • Optional herbs (thyme or parsley)

Instructions

  1. Sauté aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes. Stir occasionally to avoid burning.
  2. Create the roux: Sprinkle the flour over the sautéed onions and garlic. Stir constantly for about 2 minutes until the flour is lightly toasted.
  3. Add broth gradually: Slowly whisk in the chicken or vegetable broth, ensuring no lumps form. Continue to cook, stirring to incorporate all the flour.
  4. Incorporate milk or cream: Once the broth mixture begins to thicken, lower the heat and add the milk or cream. Stir until combined and allow to simmer for another 5-10 minutes.
  5. Season to taste: Add salt and pepper as needed. If desired, stir in fresh herbs for added flavor.
  6. Serve and enjoy: Remove from heat. This soup can be used immediately or enjoyed on its own.
