Ingredients
1 pound ground lamb (or ground beef)
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
1 cup frozen peas
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
2 pounds potatoes, peeled and cubed
1/2 cup milk (or dairy-free milk)
4 tablespoons butter (or olive oil)
Salt to taste
Instructions
Prepare the Potatoes: Start by boiling the potatoes in a large pot of salted water. Cook them for about 15 minutes, or until tender. Drain and return to the pot.
Mash the Potatoes: Add butter and milk to the drained potatoes. Mash them until smooth and creamy. Season with salt to taste. Set aside.
Cook the Ground Meat: In a large skillet over medium heat, add the ground lamb (or beef). Cook until browned, breaking it apart as it cooks, for about 5-7 minutes.
Add Vegetables: Stir in the chopped onion, minced garlic, diced carrots, and frozen peas. Cook for an additional 5 minutes, until the vegetables are softened.
Mix in Seasonings: Add the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper to the skillet. Stir to combine the mixture thoroughly, then simmer for another 5 minutes.
Assemble the Pie: Preheat your oven to 400°F (200°C). Spread the meat and vegetable filling into the bottom of a baking dish. Top it with the mashed potatoes, smoothing them out with a spatula.
Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the filling is bubbling.
Serve: Let the Shepherd’s Pie cool for a few minutes before serving. Enjoy!

Use fresh ingredients for the best flavor. For variations, consider using lentils for a vegetarian option.
