Marshmallow Ghost Brownies

Delightful brownies topped with ghostly marshmallows, perfect for Halloween celebrations.

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
  • 4 cups mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Melt 1 cup of unsalted butter in a large saucepan over low heat. Remove from heat and mix in 2 cups of granulated sugar until well combined.
  3. Add 4 large eggs to the mixture, one at a time, stirring well after each addition. Stir in 1 tablespoon of vanilla extract.
  4. Sift together 1 cup of all-purpose flour, 1 cup of cocoa powder, and 1/2 teaspoon of salt in a separate bowl. Fold the dry ingredients into the wet mixture until just combined.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Let the brownies cool in the pan for at least 10 minutes. Prepare 4 cups of mini marshmallows while they cool.
  7. Cover the top of the brownies with marshmallows and return to the oven for an additional 5 to 7 minutes until the marshmallows are puffed and slightly golden.
  8. Remove from the oven and let cool completely. Use chocolate chips to create eyes and mouths on the marshmallows.

Notes

Don’t overmix the batter and ensure the marshmallows are monitored while baking.
