A delightful Halloween breakfast casserole packed with seasonal flavors and hearty ingredients, perfect for gatherings and early risers.

Ingredients

  • 6 large eggs
  • 2 cups milk (or dairy-free alternative)
  • 4 cups bread (sourdough or whole grain)
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1 cup cooked sausage or bacon (or vegetarian option)
  • 1 cup diced bell peppers (mix of red, orange, and yellow)
  • 1/2 cup diced onions (optional)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with non-stick spray or butter.
  3. Whisk together the eggs, milk, garlic powder, salt, and pepper in a large bowl.
  4. Tear the bread into bite-sized pieces and spread evenly across the bottom of the baking dish.
  5. Sprinkle the cooked sausage (or bacon) over the bread, then add the diced peppers and onions on top.
  6. Pour the egg mixture over the layers in the baking dish.
  7. Sprinkle the shredded cheese on top.
  8. Bake for 45 minutes until set and golden brown.
  9. Cool for 5-10 minutes before slicing and serving.
