Ingredients

  • 1 whole chicken
  • 8 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the broth: In a large pot, bring 8 cups of water to a boil. Carefully add the whole chicken and then reduce the heat to a simmer.
  2. Skim the foam: As the chicken cooks, watch for any foam that rises to the surface. Skim it off with a spoon to ensure a clear broth.
  3. Add vegetables and seasonings: Stir in the chopped carrots, celery, onion, minced garlic, thyme, parsley, salt, and pepper.
  4. Simmer the soup: Let the soup simmer gently for about 90 to 120 minutes. The chicken should be fully cooked and tender.
  5. Shred the chicken: Once the chicken is done, remove it from the pot and let it cool slightly. Shred the meat, discarding the bones and skin.
  6. Return chicken to the pot: Add the shredded chicken back into the pot. Stir well and adjust seasoning if needed.
  7. Serve hot: Ladle the soup into bowls and enjoy it warm with some bread or crackers!
